Bean Salsa... Mixed Enthusiastically!

And now, dear people, I share with you a favourite...
But before I take all the credit, I want to say that I got this recipe from my mom, so props to her! Where would this world be without mothers I ask you? Without a delicious bean and veggie salsa of course! That is no world
I want to live in, and if you think the same, then read on:

A little side note-I never like to measure this recipe, it keeps it a bit different every time!

Bean Salsa

(Created by mother, loved by boyfriend)

Red pepper
Tomato
Green onion
Lime
Garlic
Black beans
Corn

Directions (with pictures for you visual learners/ no time to read words people)

 1. Chop up red pepper, tomato, green onion.
 2. Add lime juice and garlic.
3. Mix!!!!!!! (mixing should always be done enthusiastically)
 4. Add the black beans. Also add a can of corn (You can always forget to buy some too. That's what I did, and it still tasted fine!)

And now you have a bean salsa! It's super tasty with taco chips, but my favorite is to serve it on top of chicken or fish for dinner, or eggs at breakfast.

I also bought this avocado to maybe chop up and put in the salsa...I chickened out. Yes, I was not courageous enough to put an avocado into an already trusty recipe. I'll work on my bravery issues for next time...

See just an innocent avocado!

P.S. Check out the cool Tropical Salsa from the sister of the princess! It's almost as cool as the girl who made it :)

Hallelujah!! Vega Sport's new line!!

Today I was perusing my local health food store, when I noticed something...

When I passed the shelf of Vega products, some of the labels looked different... my heart beat quickened.

They completely revamped their whole sport product line! Which means that I needed to buy it ALL!!! ALL OF IT!!!!

Or maybe that's not realistic. I needed to buy as much as the cash in my wallet would allow me to buy :)

After painstakingly deciding which products to buy, and which ones I would have to leave at the store (I will come back for you Acai Berry Sport Optimizer! Please wait for me my beloved!), I headed to the check out with these:

Endurance gel in Orange Zest flavour

2 Protein bars (chocolate saviseed & chocolate coconut) & 1 Endurance bar (mocha)

Performance protein in chocolate flavour

Electrolyte hydrator in lemon lime flavor
1. I don't know exactly what Electrolyte hydrator is.
2. I know that I NEED it :)
The check out girl also gave me a copy of Alive magazine!

Overall, a very successful day!

Apples you say??

The average person eats 65 apples per year.

Apples are 25% air by volume.

Apple juice was one of the earliest prescribed antidepressants.

Plus my own fact... apples are great snacks / wonderful for baking!

Speaking of which, this chart helps you decide which kinds are best for which purpose:

Some apple ideers:

Apple Pie Dip & Cinnamon-sugar Tortillas, the Peach Kitchen

Apple Pie Crochet Cover,  from Rabbit Hollow Prims

I have really no idea who on Earth has the time to hand make a cover for an apple...or even why...but still, I like the idea :)

Apple nachos, Lynn's Kitchen Adventures

Apple Sandwiches, spotted on Fantastic Edibles

Apple Candles, from Thrifty Decor Chick

Apple Heart Treat, from The Crafty Crow

Howdy!

I've noticed so many people around me pouting their lower lip, sad that summer is coming to an end! I've never understood this, I loooooove fall! It's my favorite season!

Fall is a great chance to change up the flavors:

Cinnamon and nutmeg become my best friends.

Pumpkin and sweet potato, my companions.

Cranberries and apples, my fruity buddies.

Pecans and walnuts, my trusty nutty sidekicks.

I'm going to start some fall cookie baking! Some healthy alternative ideas I've found so far include:

Caramel Apple Granola Cookie, from Healthy Food for Living

Maple Cinnamon Pecan Cookies, from Rawmazing

Pumpkin Cranberry Almond Cookies, from Sparkepeople

Do you think of Fall as a downer? Do you enjoy it as much as me? Somewhere in the middle?

Happy living (and baking),

Love bars! Granola bars that is.

I LOVE BARS.

But...not the kind most Canadian 19 year olds enjoy (loud, rowdy, drinking bars).

I love nutty, chewy, healthy, wonderful rectangle of joy snacking bars.

In fact, whenever my mom sends me a package from home, she always includes a few of my faves from home :)

Whether you are looking for an mid afternoon pick me up, something delicious to power a workout, or a tasty and nutritious snack to make for the kiddies in your life, there are an unlimited number of recipes out there!

So if you are nut crazy or nut phobic, a dry fruit fan or adore seeds, there is a recipe for you. Whatever your ratio preference of salty to sweety, you'll find it (or you can make the recipe up!). Bars are the best, and here are just a few for inspiration:

Chocolate Cherry Snack bar, from Eating Well

Healthy Seed bar, from bits of taste

No Bake 5 Ingredient Granola Bars, from Mom on a Mission

Espresso laced granola bars, from the kitchenette

Mixed fruit homemade 'larabars," from espressoandcream

Coconut pumpkin oatmeal bars, from fit sugar

Almond Butter Granola Bars, from Anja's Food 4 Thought

Chocolate Hemp Runners Repair bar, from healthful pursuit
