I decided to make a healthy dish that I could freeze now and eat later during the hectic week when I am feeling
I was inspired by these recipes:
The final ingredient list:
-butternut squash
-tofu
-green pepper
-green onions
-medium curry powder
-light coconut milk
And SHA-BAM!!!
I hope my roommates won't be surprised when I burst through the front door at the end of the day screaming "Coconut butternut curry!!!! Yesssssss!" But...I think they're pretty used to that behavior by now :)

This looks delicious! I used to make big dinners and then freeze them too! There are just some nights where you don't feel like sitting in the kitchen and cooking after a long day! Thanks for sharing!
I am such a huge fan of curry! I actually had curry shrimp last night for dinner and leftovers for lunch today. Yum!
